Corn Salsa

corn salsa webThe recipe for this tasty side dish, courtesy of Lakeland registered dietitian, Heather Rudnik, is full of fresh ingredients that are sure to be a crowd pleaser with family and friends at your next summer gathering.

Ingredients: (Serves four as a side)

  • Kernels for 2 corn cobs, about 1 ½ cups
  • 1 (4 oz.) can of mild green chili peppers
  • 1 bell pepper, diced
  • 1 small onion, diced
  • ¼ cup red wine vinegar
  • 1 garlic clove, minced
  • ½ tsp ground cumin
  • 2 Tbsp olive or canola oil
  • Salt and pepper (optional)

Directions:

  1. Mix the vinegar, garlic, cumin, oil, and salt and pepper together in a large bowl.
  2. Add the corn, chili peppers, red peppers, and onion to the bowl and toss to combine.
  3. Put the bowl in the refrigerator and let it sit for at least 4 hours to let the flavors develop.
  4. Serve and enjoy!
